Description

Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Cinnamon Swirl:
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, salt, and 1/2 cup sugar.
  3. In another bowl, mix the melted butter, milk, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. For the cinnamon swirl, mix 1/4 cup sugar and cinnamon in a small bowl.
  6. Spoon batter into muffin cups, add a teaspoon of cinnamon mixture on top, and swirl with a toothpick.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Cool on a wire rack before serving.

Notes

Ensure not to overmix the batter for fluffy muffins. Store leftovers in an airtight container for up to 2 days.
