For the Crust:
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground cinnamon
- 1/4 cup brown sugar
- 4 oz cream cheese, softened
Instructions
1. Prepare the Crust:
- Preheat oven to 350ยฐF (175ยฐC) and line a muffin tin with liners.
- In a bowl, cream together butter and granulated sugar until light and fluffy. Add eggs one at a time, then mix in milk and vanilla.
- In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to wet ingredients until just combined.
- In a small bowl, mix cinnamon and brown sugar. Set aside.
- Fill each muffin cup halfway with batter. Add a teaspoon of cream cheese and a sprinkle of cinnamon sugar. Fill with more batter and top with more cinnamon sugar.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let cool before serving.
