For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 8 oz cremini mushrooms, sliced
- 3 cloves garlic, minced
- 3/4 cup Marsala wine
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Pound chicken breasts to an even thickness and season with salt and pepper. Dredge in flour, shaking off excess.
- Heat olive oil and 1 tbsp butter in a large skillet over medium-high heat. Cook chicken until golden brown, about 4-5 minutes per side. Remove and set aside.
- Add remaining butter to the skillet. Sautรฉ mushrooms until softened, about 5 minutes. Add garlic and cook for 1 minute until fragrant.
- Pour in Marsala wine, scraping up any browned bits. Simmer for 2-3 minutes until slightly reduced.
- Stir in heavy cream and chicken broth. Return chicken to the skillet and simmer for 5-7 minutes until sauce thickens and chicken is cooked through.
- Garnish with chopped parsley and serve hot.
