For the Crust:

  • 2 (8-ounce) filet mignon steaks
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 shallot, finely minced
  • 1/4 cup cognac
  • 1/2 cup heavy cream
  • 1 teaspoon Dijon mustard
  • 1 teaspoon fresh thyme leaves
  • Salt and freshly ground black pepper to taste

Instructions

1. Prepare the Crust:

  1. Season the steaks generously with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium-high heat. Add the steaks and sear for 3-4 minutes per side for medium-rare, or until desired doneness. Remove steaks from the skillet and let them rest on a plate.
  3. Reduce heat to medium and add butter to the same skillet. Sautรฉ the shallot until softened, about 2 minutes.
  4. Carefully pour in the cognac (it may flame up briefly). Stir to deglaze the pan, scraping up any browned bits.
  5. Add the heavy cream, Dijon mustard, and thyme. Simmer for 3-4 minutes, stirring occasionally, until the sauce thickens slightly.
  6. Return the steaks to the skillet, spooning the sauce over them. Serve immediately.

Notes

You can customize the seasonings to taste.
