Description

A classic New York style mini cheesecake recipe.


Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • 2 (8 ounce) packages cream cheese, softened
  • 2 eggs
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C).
  2. Line a muffin pan with paper liners.
  3. In a bowl, mix graham cracker crumbs, 1/4 cup sugar and melted butter. Press into the bottom of the liners.
  4. In another bowl, beat cream cheese until smooth. Add eggs, 1/2 cup sugar and vanilla; beat until smooth.
  5. Pour over crusts.
  6. Bake for 25 minutes.

Notes

For a fruit topping, add fresh berries.
