A classic New York style mini cheesecake recipe.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- 2 (8 ounce) packages cream cheese, softened
- 2 eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325 degrees F (165 degrees C).
- Line a muffin pan with paper liners.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar and melted butter. Press into the bottom of the liners.
- In another bowl, beat cream cheese until smooth. Add eggs, 1/2 cup sugar and vanilla; beat until smooth.
- Pour over crusts.
- Bake for 25 minutes.
Notes
For a fruit topping, add fresh berries.
