A classic New York-style cheesecake with a graham cracker crust and creamy filling.

- Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- Filling:
- 4 (8 ounce) packages cream cheese, softened
- 1 1/4 cups sugar
- 1 tablespoon fresh lemon juice
- 2 teaspoons vanilla extract
- 4 large eggs
- Topping (optional):
- 1 cup sour cream
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch springform pan.
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar and melted butter until well blended. Press mixture onto the bottom of the prepared pan.
- In a large bowl, mix cream cheese with 1 1/4 cups sugar until smooth. Blend in lemon juice and 2 teaspoons vanilla. Beat in eggs one at a time.
- Pour filling into the crust. Bake for 55 minutes or until the center is set. Allow to cool before removing from pan.
- For topping, mix sour cream, 2 tablespoons sugar, and 1 teaspoon vanilla. Spread over cooled cheesecake and refrigerate for at least 4 hours.
Notes
This cheesecake is best served chilled and can be topped with fresh fruit.
