Description

A classic New York-style cheesecake with a graham cracker crust and creamy filling.


Ingredients

  • Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • Filling:
  • 4 (8 ounce) packages cream cheese, softened
  • 1 1/4 cups sugar
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • Topping (optional):
  • 1 cup sour cream
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar and melted butter until well blended. Press mixture onto the bottom of the prepared pan.
  3. In a large bowl, mix cream cheese with 1 1/4 cups sugar until smooth. Blend in lemon juice and 2 teaspoons vanilla. Beat in eggs one at a time.
  4. Pour filling into the crust. Bake for 55 minutes or until the center is set. Allow to cool before removing from pan.
  5. For topping, mix sour cream, 2 tablespoons sugar, and 1 teaspoon vanilla. Spread over cooled cheesecake and refrigerate for at least 4 hours.

Notes

This cheesecake is best served chilled and can be topped with fresh fruit.
