A comforting casserole that captures the flavors of a classic Reuben sandwich with layers of corned beef, Swiss cheese, sauerkraut, and rye bread.

For the Crust:

  • 8 slices rye bread, cubed
  • 1 pound corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 2 cups Swiss cheese, shredded
  • 1/2 cup Thousand Island dressing
  • 1/4 cup butter, melted
  • 1 teaspoon caraway seeds
  • 1/2 teaspoon garlic powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375ยฐF (190ยฐC). Grease a 9×13-inch baking dish.
  2. Layer half of the rye bread cubes in the baking dish. Top with corned beef, sauerkraut, and half of the Swiss cheese.
  3. Spread Thousand Island dressing evenly over the cheese. Add the remaining bread cubes, then drizzle with melted butter. Sprinkle with caraway seeds, garlic powder, and remaining Swiss cheese.
  4. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, or until cheese is bubbly and golden.
  5. Let cool for 5 minutes before serving.

Notes

You can customize the seasonings to taste.
