Description

Ingredients

  • 1.5 lbs boneless chicken thighs
  • 1 can (14 oz) coconut milk
  • 2 tablespoons lime juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup chicken broth
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish
  • Steamed rice for serving

Instructions

  1. Season the chicken thighs with salt, pepper, cumin, garlic, and ginger.
  2. In a large skillet, heat olive oil over medium heat and brown the chicken on both sides.
  3. Add coconut milk, lime juice, and chicken broth to the skillet.
  4. Simmer for 15-20 minutes until the chicken is cooked through and the sauce thickens.
  5. Serve over steamed rice and garnish with fresh cilantro.

Notes

For a spicier version, add chopped chili peppers to the sauce.
