Ingredients

  • 4 white fish fillets (such as cod or tilapia)
  • 1 cup coconut milk
  • 2 limes, juiced and zested
  • 1 avocado, diced
  • 1 tomato, chopped
  • 1 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Marinate the fish fillets in coconut milk, lime juice, and zest for 15 minutes.
  2. Prepare the avocado salsa by mixing diced avocado, tomato, red onion, and cilantro in a bowl. Season with salt and pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Cook the fish fillets for 3-4 minutes per side until golden and cooked through.
  5. Serve the fish topped with avocado salsa.

Notes

For a spicier version, add chopped jalapeño to the salsa. Ensure fish is fresh for best results.
