For the Crust:
- 1 lb shrimp, peeled and deveined
- 2 cups coconut milk
- 2 cups chicken or vegetable broth
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 red bell pepper, sliced
- 2 green onions, chopped
- 2 tablespoons fish sauce
- Juice of 1 lime
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- Fresh cilantro, chopped, for garnish
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Heat olive oil in a large pot over medium heat. Add garlic and ginger, cook until fragrant.
- Add bell pepper and cook until softened. Pour in coconut milk and broth, bring to a simmer.
- Add shrimp, fish sauce, lime juice, soy sauce, and brown sugar. Simmer until shrimp are cooked. Season with salt and pepper, garnish with cilantro and green onions.
