For the Crust:

  • 1 lb shrimp, peeled and deveined
  • 2 cups coconut milk
  • 2 cups chicken or vegetable broth
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 red bell pepper, sliced
  • 2 green onions, chopped
  • 2 tablespoons fish sauce
  • Juice of 1 lime
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Fresh cilantro, chopped, for garnish
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add garlic and ginger, cook until fragrant.
  2. Add bell pepper and cook until softened. Pour in coconut milk and broth, bring to a simmer.
  3. Add shrimp, fish sauce, lime juice, soy sauce, and brown sugar. Simmer until shrimp are cooked. Season with salt and pepper, garnish with cilantro and green onions.
