Description
A Basque classic featuring fresh cod baked with potatoes and topped with a vibrant salsa verde made from parsley, garlic, and olive oil.

- 4 cod fillets (about 6 oz each)
- 1 lb potatoes, thinly sliced
- 1/2 cup fresh parsley, chopped
- 2 garlic cloves, minced
- 1/4 cup olive oil
- 1 tablespoon capers
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the sliced potatoes in a baking dish and season with salt and pepper.
- Place the cod fillets on top of the potatoes.
- In a bowl, mix parsley, garlic, capers, and olive oil to make the salsa verde.
- Spoon the salsa verde over the cod and potatoes.
- Bake in the oven for 20-25 minutes until the fish is cooked through.
Notes
Serve with a side of crusty bread for a complete meal. Adjust seasoning as needed.
