- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 tablespoon instant coffee granules
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup chocolate chips
Instructions
- Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the butter, granulated sugar, brown sugar, and instant coffee granules until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake for 8-10 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.
Notes
For a stronger coffee flavor, dissolve the instant coffee in a little hot water before adding it to the mixture. Store in an airtight container for up to 5 days.
