For the Crust:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup heavy cream
- 1/4 cup lemon juice
- 1 tablespoon lemon zest
- 1 cup powdered sugar
Instructions
1. Prepare the Crust:
- Preheat the oven to 350ยฐF (175ยฐC). In a large bowl, cream together the butter and sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and mix well. In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add dry ingredients to the butter mixture, mixing until combined. Roll the dough into balls and flatten slightly on a baking sheet.
- Bake cookies for 10-12 minutes or until lightly golden. Allow to cool completely.
- For the lemon cream, whisk together heavy cream, lemon juice, lemon zest, and powdered sugar until smooth.
- Spoon lemon cream onto the flat side of one cookie and sandwich with another cookie. Repeat with remaining cookies.
