Delicious soft cookies filled with a tangy lemon cream that are perfect for any occasion.

For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy cream
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 cup powdered sugar

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 350ยฐF (175ยฐC). In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add the egg and vanilla extract to the butter mixture and mix well. In a separate bowl, whisk together flour, baking soda, and salt.
  3. Gradually add dry ingredients to the butter mixture, mixing until combined. Roll the dough into balls and flatten slightly on a baking sheet.
  4. Bake cookies for 10-12 minutes or until lightly golden. Allow to cool completely.
  5. For the lemon cream, whisk together heavy cream, lemon juice, lemon zest, and powdered sugar until smooth.
  6. Spoon lemon cream onto the flat side of one cookie and sandwich with another cookie. Repeat with remaining cookies.
