A flavorful and spicy chicken soup inspired by Carrabba’s, easy to prepare at home with bold flavors.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless chicken thighs, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 jalapeno, seeded and diced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned, about 5 minutes.
- Add onion, garlic, bell pepper, and jalapeno; cook until softened, about 3 minutes.
- Stir in chicken broth, diced tomatoes, cumin, and chili powder.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot, garnished with fresh cilantro.
Notes
For extra spice, add more jalapenos; use low-sodium broth to control salt.
