Description

Ingredients

  • 1 pound fresh green beans, trimmed
  • 4 medium potatoes, diced
  • 6 slices bacon, chopped
  • 1 packet (1 ounce) ranch seasoning mix
  • 1/2 cup water or chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon and set aside, leaving the drippings in the skillet.
  2. Add the diced potatoes to the skillet and cook for about 5 minutes, stirring occasionally.
  3. Add the trimmed green beans and ranch seasoning mix to the skillet. Stir to combine.
  4. Pour in the water or chicken broth, cover, and simmer for 15-20 minutes or until the vegetables are tender.
  5. Stir in the cooked bacon, season with salt and pepper, and cook for an additional 2-3 minutes.
  6. Serve hot as a side dish.

Notes

For a vegetarian version, omit the bacon and use olive oil instead. This dish pairs well with grilled meats.
