- 1 pound ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 1 can (10 oz) Rotel tomatoes with green chilies
- 1 can (15 oz) black beans, drained and rinsed
- 1 package (16 oz) Velveeta cheese, cubed
- 1 cup shredded cheddar cheese
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Optional: Tortilla chips for serving
Instructions
- In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
- Add the diced onion, bell pepper, and garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
- Stir in the Rotel tomatoes, black beans, cumin, chili powder, salt, and pepper. Let simmer for 5 minutes.
- Reduce heat to low and add the cubed Velveeta cheese and shredded cheddar cheese. Stir until melted and well combined.
- Serve hot with tortilla chips.
Notes
For a spicier version, use hot Rotel tomatoes or add jalapeรฑos.
