Description

A hearty and flavorful dip made with ground beef, cheese, Rotel tomatoes, and spices, perfect for parties or game day.


Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 package (16 oz) Velveeta cheese, cubed
  • 1 cup shredded cheddar cheese
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Optional: Tortilla chips for serving

Instructions

  1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess fat.
  2. Add the diced onion, bell pepper, and garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.
  3. Stir in the Rotel tomatoes, black beans, cumin, chili powder, salt, and pepper. Let simmer for 5 minutes.
  4. Reduce heat to low and add the cubed Velveeta cheese and shredded cheddar cheese. Stir until melted and well combined.
  5. Serve hot with tortilla chips.

Notes

For a spicier version, use hot Rotel tomatoes or add jalapeรฑos.
