A bold and flavorful Santa Fe-inspired salad with fresh ingredients and zesty dressing.


Ingredients

  • 2 cups mixed greens
  • 1 cup black beans, drained and rinsed
  • 1 avocado, diced
  • 1 cup corn kernels
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, sliced
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, sliced
  • Dressing: 2 tbsp olive oil, 1 tbsp lime juice, 1 tsp cumin, salt to taste

Instructions

  1. Wash and dry the mixed greens, then place them in a large bowl.
  2. Add black beans, avocado, corn, cherry tomatoes, red onion, cilantro, and jalapeño to the bowl.
  3. In a small bowl, whisk together olive oil, lime juice, cumin, and salt for the dressing.
  4. Pour the dressing over the salad and toss gently to combine.
  5. Serve immediately for the freshest flavor.

Notes

For a spicier version, add more jalapeño or include some hot sauce in the dressing.
