Ingredients

- 2 cups mixed greens
- 1 cup black beans, drained and rinsed
- 1 avocado, diced
- 1 cup corn kernels
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, sliced
- 1/4 cup cilantro, chopped
- 1 jalapeño, sliced
- Dressing: 2 tbsp olive oil, 1 tbsp lime juice, 1 tsp cumin, salt to taste
Instructions
- Wash and dry the mixed greens, then place them in a large bowl.
- Add black beans, avocado, corn, cherry tomatoes, red onion, cilantro, and jalapeño to the bowl.
- In a small bowl, whisk together olive oil, lime juice, cumin, and salt for the dressing.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately for the freshest flavor.
Notes
For a spicier version, add more jalapeño or include some hot sauce in the dressing.
