  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 6 cups vegetable broth
  • 1 cup unsweetened almond milk
  • 2 cups kale, chopped
  • Salt and pepper to taste

Notes

For a creamier texture, blend half the soup before adding kale. Store leftovers in the refrigerator for up to 3 days.
