A hearty and comforting soup made with chicken, barley, and vegetables, perfect for chilly days.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 pound chicken breast, diced
- 1 cup pearl barley
- 8 cups chicken broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 bay leaves
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add chicken and cook until browned.
- Stir in barley, broth, thyme, salt, pepper, and bay leaves.
- Bring to a boil, then reduce heat and simmer for 45 minutes or until barley is tender.
- Remove bay leaves before serving.
Notes
For a vegetarian version, substitute chicken with mushrooms and use vegetable broth.
