Ingredients

- 1 lb boneless chicken breast, diced
- 2 cups carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 cups potatoes, cubed
- 1 teaspoon thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced chicken and cook until browned, about 5 minutes.
- Add onions, garlic, carrots, and celery; sauté for 5 minutes.
- Pour in chicken broth and add potatoes and thyme.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
