Description

Ingredients

  • 1 lb boneless chicken breast, diced
  • 2 cups carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups potatoes, cubed
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced chicken and cook until browned, about 5 minutes.
  3. Add onions, garlic, carrots, and celery; sauté for 5 minutes.
  4. Pour in chicken broth and add potatoes and thyme.
  5. Bring to a boil, then reduce heat and simmer for 20-25 minutes until vegetables are tender.
  6. Season with salt and pepper to taste.
  7. Serve hot.

Notes

This soup can be stored in the refrigerator for up to 3 days. For a vegetarian version, substitute chicken with tofu.
