- 8 ounces Brie cheese, rind removed and sliced
- 1/2 cup fresh cranberries
- 4 ounces pancetta, diced
- 1 tablespoon fresh thyme leaves
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- Roll out the puff pastry on the prepared baking sheet.
- Arrange the Brie slices evenly over the pastry, leaving a border around the edges.
- Sprinkle the cranberries, pancetta, and thyme over the Brie.
- Drizzle with olive oil and season with salt and pepper.
- Bake for 20-25 minutes, or until the pastry is golden and puffed.
- Remove from the oven and let cool slightly before slicing and serving.
Notes
For a vegetarian version, substitute pancetta with mushrooms.
