For the Crust:
- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1 large egg, lightly beaten
- 2 cloves garlic, minced
- 1 tsp onion powder
- Salt and pepper to taste
- 1 (14 oz) can jellied cranberry sauce
- 1 cup chili sauce
- 2 tbsp brown sugar
- 1 tbsp lemon juice
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). In a large bowl, combine ground beef, breadcrumbs, egg, garlic, onion powder, salt, and pepper. Mix until just combined.
- Shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper. Bake for 15-18 minutes, or until cooked through.
- While the meatballs bake, make the glaze. In a saucepan over medium heat, combine the cranberry sauce, chili sauce, brown sugar, and lemon juice. Cook, stirring frequently, until the cranberry sauce melts and the mixture is smooth.
- Transfer the cooked meatballs to a large skillet or slow cooker. Pour the warm cranberry glaze over the meatballs and stir gently to coat. Simmer on low for 10 minutes to allow the flavors to meld. Serve warm.
