Description

Festive cookies combining tart cranberries and bright orange flavors for a holiday treat.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • Optional: 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in orange zest and vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in dried cranberries and walnuts if using.
  7. Drop tablespoon-sized balls of dough onto prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a softer cookie, avoid overbaking. Store in an airtight container for up to a week.
