Description

Delicious no-bake cheesecake balls made with cream cheese, dried cranberries, and chopped pistachios, then coated in melted white chocolate for a festive treat.


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup dried cranberries
  • 1/2 cup shelled pistachios, finely chopped
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 oz white chocolate, melted
  • Optional: Extra chopped pistachios for garnish

Instructions

  1. In a large bowl, beat the cream cheese until smooth.
  2. Stir in the dried cranberries, chopped pistachios, powdered sugar, and vanilla extract until well combined.
  3. Scoop the mixture and roll into 1-inch balls, then place on a baking sheet lined with parchment paper.
  4. Refrigerate the balls for 30 minutes to firm up.
  5. Melt the white chocolate in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
  6. Dip each ball into the melted white chocolate, coating evenly, and return to the baking sheet.
  7. Sprinkle with extra chopped pistachios if desired, then refrigerate for another 15 minutes until the chocolate sets.
  8. Serve chilled and enjoy!
