- 1/2 cup dried cranberries
- 1/2 cup shelled pistachios, finely chopped
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 8 oz white chocolate, melted
- Optional: Extra chopped pistachios for garnish
Instructions
- In a large bowl, beat the cream cheese until smooth.
- Stir in the dried cranberries, chopped pistachios, powdered sugar, and vanilla extract until well combined.
- Scoop the mixture and roll into 1-inch balls, then place on a baking sheet lined with parchment paper.
- Refrigerate the balls for 30 minutes to firm up.
- Melt the white chocolate in a microwave-safe bowl, heating in 30-second intervals and stirring until smooth.
- Dip each ball into the melted white chocolate, coating evenly, and return to the baking sheet.
- Sprinkle with extra chopped pistachios if desired, then refrigerate for another 15 minutes until the chocolate sets.
- Serve chilled and enjoy!
