For the Crust:
- 4 large yellow onions, peeled and sliced into 1/2-inch rounds
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 cup whole milk
- 1/2 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground nutmeg
- Salt and freshly ground black pepper to taste
- 3/4 cup grated Asiago cheese, divided
- 1 tablespoon chopped fresh parsley for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375ยฐF (190ยฐC). Lightly grease a 9×13 inch baking dish.
- Arrange the onion rounds in a single layer in the prepared baking dish, slightly overlapping if necessary.
- In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute to form a roux. Gradually whisk in the milk and cream until smooth. Bring to a simmer, stirring constantly, until the sauce thickens.
- Remove the sauce from heat. Stir in garlic powder, nutmeg, salt, pepper, and 1/2 cup of the grated Asiago cheese until the cheese is melted and the sauce is smooth.
- Pour the creamy sauce evenly over the onions in the baking dish. Sprinkle the remaining 1/4 cup of Asiago cheese on top.
- Bake for 25-30 minutes, or until the onions are tender, the sauce is bubbly, and the top is golden brown. Let stand for 5 minutes before serving. Garnish with fresh parsley.
