Sweet, tender onions baked in a rich, creamy sauce and topped with nutty, melted Asiago cheese for an unforgettable side dish.

For the Crust:

  • 4 large yellow onions, peeled and sliced into 1/2-inch rounds
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground nutmeg
  • Salt and freshly ground black pepper to taste
  • 3/4 cup grated Asiago cheese, divided
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375ยฐF (190ยฐC). Lightly grease a 9×13 inch baking dish.
  2. Arrange the onion rounds in a single layer in the prepared baking dish, slightly overlapping if necessary.
  3. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for 1 minute to form a roux. Gradually whisk in the milk and cream until smooth. Bring to a simmer, stirring constantly, until the sauce thickens.
  4. Remove the sauce from heat. Stir in garlic powder, nutmeg, salt, pepper, and 1/2 cup of the grated Asiago cheese until the cheese is melted and the sauce is smooth.
  5. Pour the creamy sauce evenly over the onions in the baking dish. Sprinkle the remaining 1/4 cup of Asiago cheese on top.
  6. Bake for 25-30 minutes, or until the onions are tender, the sauce is bubbly, and the top is golden brown. Let stand for 5 minutes before serving. Garnish with fresh parsley.
