A warm, comforting soup combining the rich flavors of gruyere cheese and broccoli, topped with crispy garlic breadcrumbs.

For the Crust:

  • 1 head of broccoli, chopped
  • 1 cup of grated Gruyere cheese
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 cup bread crumbs
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, heat 1 tablespoon of olive oil over medium heat and add broccoli, cooking until tender.
  2. Add vegetable broth and simmer for 10 minutes, then blend until smooth.
  3. Stir in heavy cream and Gruyere cheese, mixing until the cheese is melted and soup is creamy.
  4. In a pan, heat remaining olive oil, add minced garlic and breadcrumbs, cooking until crispy and golden brown.
  5. Season the soup with salt and pepper to taste, then serve topped with the garlic breadcrumbs.
