For the Crust:
- 1 head of broccoli, chopped
- 1 cup of grated Gruyere cheese
- 2 cups vegetable broth
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 cup bread crumbs
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large pot, heat 1 tablespoon of olive oil over medium heat and add broccoli, cooking until tender.
- Add vegetable broth and simmer for 10 minutes, then blend until smooth.
- Stir in heavy cream and Gruyere cheese, mixing until the cheese is melted and soup is creamy.
- In a pan, heat remaining olive oil, add minced garlic and breadcrumbs, cooking until crispy and golden brown.
- Season the soup with salt and pepper to taste, then serve topped with the garlic breadcrumbs.
