A deliciously creamy pasta dish with Cajun spiced chicken and a rich mozzarella alfredo sauce, perfect for a comforting dinner.

For the Crust:

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 12 ounces rotini pasta
  • 1 tablespoon olive oil
  • 2 cups heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook the rotini pasta according to package instructions, then drain and set aside.
  2. Season the chicken breasts with Cajun seasoning. In a large skillet, heat olive oil over medium heat and cook chicken until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and slice into strips.
  3. In the same skillet, add minced garlic and sautรฉ for 1 minute. Pour in heavy cream, and bring to a gentle simmer. Stir in mozzarella and Parmesan cheeses until melted and smooth. Add cooked pasta and chicken to the sauce and mix well to combine. Season with salt and pepper to taste.
