Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 pound boneless chicken breast, cubed
- 6 cups chicken broth
- 2 cups egg noodles
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, celery, and garlic; sauté until softened, about 5 minutes.
- Add cubed chicken and cook until browned, about 5-7 minutes.
- Pour in chicken broth and bring to a boil.
- Add egg noodles and simmer until tender, about 8-10 minutes.
- Stir in heavy cream and season with salt and pepper.
- Simmer for another 5 minutes until creamy.
- Garnish with fresh parsley before serving.
Notes
For a thicker soup, add a roux or extra cream. Store leftovers in the fridge for up to 3 days.
