Description

A warm and creamy soup made with tender chicken, noodles, and vegetables for a comforting meal.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 pound boneless chicken breast, cubed
  • 6 cups chicken broth
  • 2 cups egg noodles
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, celery, and garlic; sauté until softened, about 5 minutes.
  3. Add cubed chicken and cook until browned, about 5-7 minutes.
  4. Pour in chicken broth and bring to a boil.
  5. Add egg noodles and simmer until tender, about 8-10 minutes.
  6. Stir in heavy cream and season with salt and pepper.
  7. Simmer for another 5 minutes until creamy.
  8. Garnish with fresh parsley before serving.

Notes

For a thicker soup, add a roux or extra cream. Store leftovers in the fridge for up to 3 days.
