For the Crust:

  • 2 cups cheese tortellini
  • 1 pound chicken breast, diced
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook the tortellini according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through.
  3. Add the minced garlic to the skillet and sautรฉ for 1-2 minutes until fragrant. Stir in the heavy cream and bring to a simmer. Add the parmesan cheese, stirring until melted and the sauce thickens.
  4. Mix in the spinach and cooked tortellini, stirring gently until the spinach wilts. Season with salt and pepper to taste.
  5. Serve warm, garnished with additional parmesan if desired.
