For the Crust:
- 2 cups cheese tortellini
- 1 pound chicken breast, diced
- 2 cups fresh spinach
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook the tortellini according to package instructions, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the diced chicken and cook until browned and cooked through.
- Add the minced garlic to the skillet and sautรฉ for 1-2 minutes until fragrant. Stir in the heavy cream and bring to a simmer. Add the parmesan cheese, stirring until melted and the sauce thickens.
- Mix in the spinach and cooked tortellini, stirring gently until the spinach wilts. Season with salt and pepper to taste.
- Serve warm, garnished with additional parmesan if desired.
