Description

This comforting soup combines tender chicken, nutty wild rice, and creamy broth for a perfect cozy meal.


Ingredients

  • 1 cup wild rice, uncooked
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 pound chicken breast, cubed
  • 6 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. Rinse the wild rice under cold water and cook according to package instructions; set aside.
  2. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
  3. Add garlic and chicken cubes; cook until chicken is no longer pink, about 7 minutes.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
  5. Stir in the cooked wild rice and heavy cream; simmer for another 10 minutes.
  6. Season with salt and pepper to taste. Garnish with fresh thyme before serving.

Notes

For a thicker soup, blend a portion of it before adding the cream. Store leftovers in the refrigerator for up to 3 days.
