- 1 cup wild rice, uncooked
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 pound chicken breast, cubed
- 6 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Rinse the wild rice under cold water and cook according to package instructions; set aside.
- In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened, about 5 minutes.
- Add garlic and chicken cubes; cook until chicken is no longer pink, about 7 minutes.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 20 minutes.
- Stir in the cooked wild rice and heavy cream; simmer for another 10 minutes.
- Season with salt and pepper to taste. Garnish with fresh thyme before serving.
Notes
For a thicker soup, blend a portion of it before adding the cream. Store leftovers in the refrigerator for up to 3 days.
