For the Crust:
- 1 lb crab meat
- 1 lb shrimp, peeled and deveined
- 4 cups seafood stock
- 1 cup heavy cream
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp Old Bay seasoning
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- In a large pot, melt butter over medium heat. Add onion and garlic, sautรฉ until translucent.
- Whisk in flour to create a roux, cooking for 2 minutes until golden.
- Gradually pour in seafood stock, whisking continuously to avoid lumps.
- Add crab meat, shrimp, paprika, Old Bay seasoning, salt, and pepper. Simmer for 15 minutes.
- Stir in heavy cream and simmer for an additional 5 minutes.
- Garnish with fresh parsley before serving.
