For the Crust:
- 4 boneless, skinless chicken breasts
- Salt and freshly ground black pepper
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 2 tablespoons fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Season chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from the skillet and set aside.
- Reduce heat to medium. In the same skillet, melt the butter. Add the minced garlic and sautรฉ for about 1 minute until fragrant.
- Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 2-3 minutes to reduce slightly.
- Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Bring the sauce to a gentle simmer and cook for 3-4 minutes, stirring constantly, until the cheese has melted and the sauce has thickened.
- Return the chicken breasts to the skillet, spooning the sauce over them. Simmer for another 2-3 minutes to heat the chicken through. Garnish with fresh parsley before serving.
