For the Crust:
- 1 pound large shrimp, peeled and deveined
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 tablespoon lemon juice
- Salt and black pepper to taste
- 1 cup jasmine rice
- 2 cups chicken broth
- 1/4 cup fresh parsley, chopped
- 1 tablespoon olive oil
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine rice, chicken broth, and olive oil. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit covered for 5 minutes, then stir in chopped parsley.
- In a large skillet, melt the butter over medium heat. Add garlic and sautรฉ for 1 minute until fragrant. Add shrimp and cook until pink, about 2-3 minutes per side.
- Pour in the heavy cream and lemon juice, and season with salt and pepper. Simmer for 3-4 minutes until sauce is slightly thickened. Serve shrimp over herb rice.
