- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoons fresh herbs (such as parsley and chives), finely chopped
- 1/2 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup chopped nuts for rolling
Instructions
- In a large bowl, beat the softened cream cheese until smooth.
- Mix in the sun-dried tomatoes, fresh herbs, cheddar cheese, garlic powder, salt, and pepper.
- Shape the mixture into a log and roll it in chopped nuts to coat.
- Wrap the log in plastic wrap and refrigerate for at least 1 hour to firm up.
- Serve with crackers or sliced vegetables.
Notes
For a spicier version, add a pinch of cayenne pepper. Store in the refrigerator for up to 3 days.
