- 2 tablespoons butter
- 1 large onion, diced
- 1 pound fresh mushrooms, sliced
- 2 teaspoons dried dill
- 1 tablespoon paprika
- 1 tablespoon soy sauce
- 2 cups chicken broth
- 1 cup milk
- 2 tablespoons flour
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the diced onion and cook until softened, about 5 minutes.
- Stir in the sliced mushrooms, dill, paprika, and soy sauce; cook for another 5 minutes.
- Pour in the chicken broth and bring to a boil, then reduce heat and simmer for 15 minutes.
- In a separate bowl, whisk together the milk and flour until smooth, then add to the soup.
- Cook, stirring constantly, until the soup thickens, about 5 minutes.
- Season with salt and pepper to taste and serve hot.
Notes
For a vegetarian version, use vegetable broth instead of chicken broth. Garnish with fresh parsley if desired.
