Description

A creamy and hearty soup featuring mushrooms, onions, and paprika, perfect for a cozy meal.


Ingredients

  • 2 tablespoons butter
  • 1 large onion, diced
  • 1 pound fresh mushrooms, sliced
  • 2 teaspoons dried dill
  • 1 tablespoon paprika
  • 1 tablespoon soy sauce
  • 2 cups chicken broth
  • 1 cup milk
  • 2 tablespoons flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the diced onion and cook until softened, about 5 minutes.
  3. Stir in the sliced mushrooms, dill, paprika, and soy sauce; cook for another 5 minutes.
  4. Pour in the chicken broth and bring to a boil, then reduce heat and simmer for 15 minutes.
  5. In a separate bowl, whisk together the milk and flour until smooth, then add to the soup.
  6. Cook, stirring constantly, until the soup thickens, about 5 minutes.
  7. Season with salt and pepper to taste and serve hot.

Notes

For a vegetarian version, use vegetable broth instead of chicken broth. Garnish with fresh parsley if desired.
