For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup pesto sauce
  • 1 cup cherry tomatoes, halved
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Season the chicken breasts with salt and pepper.
  3. In a large skillet over medium heat, heat olive oil and brown the chicken breasts on both sides for about 5 minutes each.
  4. Arrange the chicken breasts in a baking dish. In the same skillet, add the pesto sauce and heavy cream, stirring to combine, then pour this mixture over the chicken.
  5. Scatter the cherry tomatoes around the chicken in the baking dish.
  6. Bake for 20-25 minutes until the chicken is cooked through and the tomatoes are roasted.
  7. Serve hot, garnished with fresh basil if desired.
