For the Crust:
- 4 boneless, skinless chicken breasts
- 1 cup pesto sauce
- 1 cup cherry tomatoes, halved
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC).
- Season the chicken breasts with salt and pepper.
- In a large skillet over medium heat, heat olive oil and brown the chicken breasts on both sides for about 5 minutes each.
- Arrange the chicken breasts in a baking dish. In the same skillet, add the pesto sauce and heavy cream, stirring to combine, then pour this mixture over the chicken.
- Scatter the cherry tomatoes around the chicken in the baking dish.
- Bake for 20-25 minutes until the chicken is cooked through and the tomatoes are roasted.
- Serve hot, garnished with fresh basil if desired.
