Description

A creamy cheesecake with a raspberry swirl and white chocolate flavor.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 cup white chocolate chips, melted
  • 1/2 cup raspberry preserves
  • Fresh raspberries for garnish

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the bottom of a 9-inch springform pan.
  3. Beat cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, beating after each.
  4. Stir in melted white chocolate. Pour over crust.
  5. Drop raspberry preserves by spoonfuls onto the batter and swirl with a knife.
  6. Bake for 55-60 minutes or until center is set. Cool and refrigerate for at least 4 hours.

Notes

For best results, use fresh raspberries and chill overnight.
