A creamy cheesecake with a raspberry swirl and white chocolate flavor.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/3 cup butter, melted
- 3 packages (8 oz each) cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 3 eggs
- 1 cup white chocolate chips, melted
- 1/2 cup raspberry preserves
- Fresh raspberries for garnish
Instructions
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, 1/4 cup sugar, and melted butter; press into the bottom of a 9-inch springform pan.
- Beat cream cheese, 1 cup sugar, and vanilla until smooth. Add eggs one at a time, beating after each.
- Stir in melted white chocolate. Pour over crust.
- Drop raspberry preserves by spoonfuls onto the batter and swirl with a knife.
- Bake for 55-60 minutes or until center is set. Cool and refrigerate for at least 4 hours.
Notes
For best results, use fresh raspberries and chill overnight.
