For the Crust:

  • 2 pounds ripe tomatoes, halved
  • 1 head of garlic, cloves separated and peeled
  • 1 onion, chopped
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Place tomatoes and garlic on a baking sheet, drizzle with olive oil, and roast for 20 minutes.
  2. Transfer roasted tomatoes and garlic to a pot. Add chopped onion and vegetable broth. Simmer for 10 minutes.
  3. Blend the mixture until smooth. Stir in heavy cream, season with salt and pepper, and heat through before serving.

You can customize the seasonings to taste.
