For the Crust:
- 2 pounds ripe tomatoes, halved
- 1 head of garlic, cloves separated and peeled
- 1 onion, chopped
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Place tomatoes and garlic on a baking sheet, drizzle with olive oil, and roast for 20 minutes.
- Transfer roasted tomatoes and garlic to a pot. Add chopped onion and vegetable broth. Simmer for 10 minutes.
- Blend the mixture until smooth. Stir in heavy cream, season with salt and pepper, and heat through before serving.
