Description

Ingredients

  • 1 pound chicken breast, cubed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 package (16 oz) potato gnocchi
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add cubed chicken and cook until browned, about 5-7 minutes.
  3. Add minced garlic and cook for another minute.
  4. Stir in heavy cream and bring to a simmer.
  5. Add fresh spinach and cook until wilted.
  6. Meanwhile, cook gnocchi according to package instructions and drain.
  7. Add cooked gnocchi to the skillet and toss to combine.
  8. Stir in grated Parmesan cheese and season with salt and pepper.

Notes

For a lighter version, substitute heavy cream with half-and-half.
