For the Crust:
- 2 tbsp unsalted butter
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 2 cups vegetable broth
- 1/2 cup heavy cream
- 1 tsp sugar
- 1 tsp dried basil
- Salt and pepper to taste
- 4 slices bread
- 1 cup shredded cheddar cheese
- 2 tbsp butter, for grilling
Instructions
1. Prepare the Crust:
- In a large pot, melt butter over medium heat. Add onion and garlic, sautรฉ until softened.
- Stir in crushed tomatoes, vegetable broth, sugar, and basil. Simmer for 20 minutes.
- Blend the soup until smooth using an immersion blender or regular blender. Stir in heavy cream and season with salt and pepper.
- For the grilled cheese croutons, butter one side of each bread slice. Place cheese between two slices, buttered sides out.
- Cook in a skillet over medium heat until golden and cheese is melted. Cut into small squares.
- Serve the bisque hot, topped with grilled cheese croutons.
