A rich and velvety tomato bisque paired with crispy grilled cheese croutons for the ultimate comfort food experience.

For the Crust:

  • 2 tbsp unsalted butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 cups vegetable broth
  • 1/2 cup heavy cream
  • 1 tsp sugar
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 4 slices bread
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter, for grilling

Instructions

1. Prepare the Crust:

  1. In a large pot, melt butter over medium heat. Add onion and garlic, sautรฉ until softened.
  2. Stir in crushed tomatoes, vegetable broth, sugar, and basil. Simmer for 20 minutes.
  3. Blend the soup until smooth using an immersion blender or regular blender. Stir in heavy cream and season with salt and pepper.
  4. For the grilled cheese croutons, butter one side of each bread slice. Place cheese between two slices, buttered sides out.
  5. Cook in a skillet over medium heat until golden and cheese is melted. Cut into small squares.
  6. Serve the bisque hot, topped with grilled cheese croutons.
