- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 cup coconut cream
- 1/2 cup chicken broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon red pepper flakes
- Fresh basil for garnish
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat.
- Add chicken and cook until browned, about 5-6 minutes per side.
- Remove chicken and set aside.
- In the same skillet, add garlic and cook until fragrant.
- Add coconut cream, chicken broth, Italian seasoning, and red pepper flakes.
- Bring to a simmer and cook until thickened.
- Return chicken to the skillet and simmer for another 5 minutes.
- Garnish with fresh basil and serve.
