Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/2 cup all-purpose flour
  • Salt and pepper to taste
  • 4 slices of bread
  • 1 cup romaine lettuce, chopped
  • 1/4 cup Caesar dressing
  • 1/4 cup croutons

Instructions

  1. Pound the chicken breasts to an even thickness.
  2. Season the chicken with salt and pepper.
  3. Dredge the chicken in flour, then dip in beaten eggs, and coat with a mixture of breadcrumbs and Parmesan cheese.
  4. Fry the chicken in oil over medium heat until golden and crispy, about 5-7 minutes per side.
  5. Toast the bread slices.
  6. Assemble the sandwich by placing the crispy chicken on the bread, topped with chopped romaine lettuce, Caesar dressing, and croutons.
