A deliciously crispy chicken dish coated in coconut flakes, served with a homemade sweet and tangy peach sauce to add a burst of flavor.

For the Crust:

  • 1 lb chicken breasts, cut into strips
  • 1 cup shredded coconut
  • 1/2 cup panko breadcrumbs
  • 2 eggs, beaten
  • 1/4 cup flour
  • Salt and pepper to taste
  • 1 cup fresh peaches, diced
  • 1/4 cup honey
  • 2 tablespoons lime juice

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
  2. In a bowl, mix shredded coconut and panko breadcrumbs. In another bowl, place flour and season with salt and pepper. In a third bowl, beat the eggs.
  3. Dip chicken strips in the flour, then eggs, and coat with coconut mixture. Place on baking sheet and bake for 18-20 minutes.
  4. While chicken is baking, combine peaches, honey, and lime juice in a saucepan. Cook over medium heat until peaches soften, about 10 minutes.
  5. Blend sauce mixture until smooth, then serve warm with crispy chicken.
