For the Crust:
- 1 lb chicken breasts, cut into strips
- 1 cup shredded coconut
- 1/2 cup panko breadcrumbs
- 2 eggs, beaten
- 1/4 cup flour
- Salt and pepper to taste
- 1 cup fresh peaches, diced
- 1/4 cup honey
- 2 tablespoons lime juice
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC) and line a baking sheet with parchment paper.
- In a bowl, mix shredded coconut and panko breadcrumbs. In another bowl, place flour and season with salt and pepper. In a third bowl, beat the eggs.
- Dip chicken strips in the flour, then eggs, and coat with coconut mixture. Place on baking sheet and bake for 18-20 minutes.
- While chicken is baking, combine peaches, honey, and lime juice in a saucepan. Cook over medium heat until peaches soften, about 10 minutes.
- Blend sauce mixture until smooth, then serve warm with crispy chicken.
