Description

An elegant and easy appetizer featuring toasted baguette slices topped with melted brie and sweet-tart balsamic roasted cranberries.


Ingredients

For the Crust:

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 cups fresh cranberries
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • 8 oz wheel of brie cheese, rind removed and cut into slices
  • 1 tablespoon fresh thyme leaves
  • Salt and black pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Arrange baguette slices on a baking sheet and toast for 5-7 minutes until lightly golden and crisp.
  2. In a bowl, toss cranberries with balsamic vinegar, honey, olive oil, and a pinch of salt. Spread on a parchment-lined baking sheet and roast for 15 minutes until cranberries have burst and sauce is slightly thickened.
  3. Top each toasted baguette slice with a slice of brie. Return to the oven for 3-4 minutes to soften the cheese.
  4. Spoon the warm balsamic cranberries and their syrup over the melted brie. Garnish with fresh thyme leaves and a crack of black pepper. Serve immediately.
