Description
An elegant and easy appetizer featuring toasted baguette slices topped with melted brie and sweet-tart balsamic roasted cranberries.

For the Crust:
- 1 baguette, sliced into 1/2-inch rounds
- 2 cups fresh cranberries
- 3 tablespoons balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon olive oil
- 8 oz wheel of brie cheese, rind removed and cut into slices
- 1 tablespoon fresh thyme leaves
- Salt and black pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Arrange baguette slices on a baking sheet and toast for 5-7 minutes until lightly golden and crisp.
- In a bowl, toss cranberries with balsamic vinegar, honey, olive oil, and a pinch of salt. Spread on a parchment-lined baking sheet and roast for 15 minutes until cranberries have burst and sauce is slightly thickened.
- Top each toasted baguette slice with a slice of brie. Return to the oven for 3-4 minutes to soften the cheese.
- Spoon the warm balsamic cranberries and their syrup over the melted brie. Garnish with fresh thyme leaves and a crack of black pepper. Serve immediately.
