Crispy on the outside, tender on the inside, these potatoes are tossed in garlic and parmesan for a flavorful side dish.

- 2 pounds Yukon Gold potatoes, washed and quartered
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the quartered potatoes with olive oil, minced garlic, salt, pepper, and dried thyme until evenly coated.
- Spread the potatoes out on the prepared baking sheet in a single layer.
- Bake for 25-30 minutes, flipping halfway through, until the potatoes are golden and crispy.
- Remove from the oven and immediately sprinkle with grated Parmesan cheese, then let cool for 5 minutes before serving.
Notes
For extra crispiness, soak the potatoes in cold water for 30 minutes before baking. Store leftovers in an airtight container in the fridge for up to 3 days.
