For the Crust:

  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1/2 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 1/4 cup roasted pumpkin seeds
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400ยฐF (200ยฐC).
  2. In a large bowl, toss the butternut squash cubes with olive oil, honey, salt, and pepper until well coated.
  3. Spread the squash on a baking sheet in a single layer and roast for 25-30 minutes, stirring halfway through, until tender and edges are crispy.
  4. Remove from oven and let cool slightly. Transfer to a serving bowl.
  5. Garnish with dried cranberries, crumbled feta, and roasted pumpkin seeds before serving.
