For the Crust:

  • 2 medium zucchinis, grated
  • 2 medium potatoes, peeled and grated
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil

Instructions

1. Prepare the Crust:

  1. Preheat the oven to 400ยฐF (200ยฐC) and grease a muffin tin with olive oil.
  2. In a large bowl, combine grated zucchini and potatoes. Squeeze out excess moisture using a clean kitchen towel.
  3. Add Parmesan cheese, beaten eggs, flour, salt, pepper, and garlic powder to the bowl. Mix until well combined.
  4. Divide the mixture evenly among the muffin cups. Drizzle with a little olive oil on top.
  5. Bake for 25-30 minutes or until the muffins are golden brown and crispy on the edges. Let cool slightly before serving.
