For the Crust:
- 2 medium zucchinis, grated
- 2 medium potatoes, peeled and grated
- 1/2 cup grated Parmesan cheese
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
Instructions
1. Prepare the Crust:
- Preheat the oven to 400ยฐF (200ยฐC) and grease a muffin tin with olive oil.
- In a large bowl, combine grated zucchini and potatoes. Squeeze out excess moisture using a clean kitchen towel.
- Add Parmesan cheese, beaten eggs, flour, salt, pepper, and garlic powder to the bowl. Mix until well combined.
- Divide the mixture evenly among the muffin cups. Drizzle with a little olive oil on top.
- Bake for 25-30 minutes or until the muffins are golden brown and crispy on the edges. Let cool slightly before serving.
