For the Crust:
- 4 salmon fillets
- 1 cup jasmine rice
- 2 tablespoons olive oil
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon sriracha
- 1 teaspoon garlic powder
- 2 cups mixed vegetables (such as bell peppers and broccoli)
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400ยฐF (200ยฐC). Rub salmon fillets with olive oil, salt, and pepper. Place on a baking sheet and bake for 15-20 minutes until crispy.
- While the salmon is baking, cook jasmine rice according to package instructions and set aside.
- In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and garlic powder to create the bang bang sauce.
- Sautรฉ mixed vegetables in a pan with a bit of olive oil, season with salt and pepper.
- Assemble bowls by placing a portion of rice, vegetables, and a salmon fillet in each bowl. Drizzle with bang bang sauce and serve.
