A delightful dish featuring crispy salmon fillets served over rice and veggies, topped with a creamy, tangy bang bang sauce.

For the Crust:

  • 4 salmon fillets
  • 1 cup jasmine rice
  • 2 tablespoons olive oil
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon garlic powder
  • 2 cups mixed vegetables (such as bell peppers and broccoli)
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400ยฐF (200ยฐC). Rub salmon fillets with olive oil, salt, and pepper. Place on a baking sheet and bake for 15-20 minutes until crispy.
  2. While the salmon is baking, cook jasmine rice according to package instructions and set aside.
  3. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and garlic powder to create the bang bang sauce.
  4. Sautรฉ mixed vegetables in a pan with a bit of olive oil, season with salt and pepper.
  5. Assemble bowls by placing a portion of rice, vegetables, and a salmon fillet in each bowl. Drizzle with bang bang sauce and serve.
