Description
This easy crockpot taco casserole is loaded with all your favorite taco ingredients and makes a great weeknight meal.

- 1 lb ground beef
- 1 onion, diced
- 2 cans (15 oz each) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 packet taco seasoning
- 4 oz cream cheese
- 2 cups cooked rice
Instructions
- Brown the ground beef and diced onion in a skillet over medium heat until beef is no longer pink.
- Drain excess fat and stir in taco seasoning.
- Add the beef mixture, black beans, corn, and cooked rice to the slow cooker.
- Cut the cream cheese into cubes and place on top.
- Cook on low for 2 hours or until heated through and cream cheese is melted.
- Stir to combine and serve hot.
Notes
Serve with your favorite taco toppings like shredded cheese, salsa, sour cream, or avocado.
