Ingredients

  • 1 medium onion, chopped
  • 1 packet (1 ounce) taco seasoning
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (14.5 ounces) diced tomatoes with green chilies
  • 2 cups beef broth
  • 8 ounces spaghetti, uncooked and broken into pieces
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream for garnish
  • Fresh cilantro for garnish

Instructions

  1. In a large skillet over medium heat, brown the ground beef and chopped onion until the beef is no longer pink; drain any excess fat.
  2. Stir in the taco seasoning and cook for 1 minute.
  3. Transfer the beef mixture to the crockpot.
  4. Add the black beans, diced tomatoes, beef broth, and broken spaghetti to the crockpot; stir to combine.
  5. Cover and cook on low for 4-6 hours, or until the spaghetti is tender and the flavors are blended.
  6. Stir in the shredded cheddar cheese until melted.
  7. Serve hot, garnished with sour cream and fresh cilantro if desired.
