- 1 pound ground beef
- 1 medium onion, chopped
- 1 packet (1 ounce) taco seasoning
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (14.5 ounces) diced tomatoes with green chilies
- 2 cups beef broth
- 8 ounces spaghetti, uncooked and broken into pieces
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream for garnish
- Fresh cilantro for garnish
Instructions
- In a large skillet over medium heat, brown the ground beef and chopped onion until the beef is no longer pink; drain any excess fat.
- Stir in the taco seasoning and cook for 1 minute.
- Transfer the beef mixture to the crockpot.
- Add the black beans, diced tomatoes, beef broth, and broken spaghetti to the crockpot; stir to combine.
- Cover and cook on low for 4-6 hours, or until the spaghetti is tender and the flavors are blended.
- Stir in the shredded cheddar cheese until melted.
- Serve hot, garnished with sour cream and fresh cilantro if desired.
Notes
For a vegetarian version, substitute ground beef with plant-based crumbles. Ensure spaghetti is fully submerged to avoid overcooking.
